It’s 5.30 am and I’m slaving over 20 kgs of sautee’d mushrooms, I have mushroom odour infused into my nostril hairs! O.k a bit too much information but you get the idea, I’m cooking breakfast for around 380 people and the docket machine comes alive! “Room Service” It’s action time! If I was half asleep when I walked into a neon lit kitchen, the frantic pace at which the kitchen transforms has kicked me from behind! Wake up chef! Thankfully my compadre has a double shot espresso resting under the pass.
